I’m at it again with the Quest Protein Recipes!
Another subscriber over on my YouTube channel asked for a delicious holiday cookie using the Quest protein powder..and then suggested gingerbread as one of the possible flavors. I instantly got hungry and knew I needed to make a recipe for them. Why? Because this girl lovessss gingerbread flavored anything!
Also, it fit right into the theme of this month’s Recipe Redux Theme:
“Many of us are especially thankful for food memories we have shared with friends or relatives throughout our lives. Was it a special meal you ate as a child? See, as a kid, I grew up EVERY holiday season making molasses cookies and gingerbread men with my mom and grandma. My grandma even had her own secret recipe for the molasses cookies that are TO DIE FOR. Unfortunately, the cookies were also loaded with fat and calories with all the butter and such that went into the delicious guys.
But it is one of the reasons I love the holidays, baking and cooking with lots of holiday flavors brings back so many wonderful memories. So when I saw this month’s RR theme, I thought, what is the difference between gingerbread and molasses anyways? My readers asked for a gingerbread recipe, and my memories that fit the theme are of molasses cookies..but when I looked at recipes for both online..they were basically the same! Both had ginger and molasses in them! So, I decided to make ONE healthy, ginger and molasses filled cookie..and make everyone happy 🙂
But I really do love the ginger flavor..Like have you seen my past ? Or my ? Or my ? Or my ? Or my ? Or even my ?

Anyways, this protein has just got me hooked on cooking with it! This Quest protein has me in awe with how well it bakes! Never leaving the end result dry or cardboard like, which happened to me all the time with other protein powders. It must be the mix of the whey and casein..
Mmm mmm mmm. Again, these were a hit with my roomies! Especially because we were just talking about how we all wanted to start decorating for Christmas already..and then these cookies filled the house with a scent that we all associate with just that, Christmas! Ah, is anyone else with me when I say I canNOT wait for Christmas?
Yes, I am the one that begins listening to Christmas music way in advance..yep, that annoying one 🙂

- 1 scoop Quest Vanilla Protein
- 2 tbsp Coconut Flour
- 4 heaping tbsp Unsweetened Applesauce
- 1 tbsp Blackstrap Molasses
- 5 drops of Liquid Stevia (or more molasses)
- 1 tsp Ground Ginger
- 1/2 tsp Cinnamon
- 1/4 tsp All Spice
- dash of Sea Salt
- Preheat oven to 350 degrees Fahrenheit
- Combine all ingredients in bowl and mix well
- Form into small balls, about 12
- Bake on cookie sheet sprayed with nonstick spray for about 10 minutes
