A delicious, easy peanut butter pancakes recipe that is flourless and healthy, yet full of that peanut butter flavor!

THIS GIRL. Which is why I made these.
Plus a fun fact about me: one of my comfort foods is toast topped with peanut butter and banana slices, and even honey drizzled on top sometimes. Peanut butter and bananas. Something about that combination makes a smile come across my face no matter what mood I was in before.
Made of only three main, healthy, delicious ingredients, and sinlessly sweet without any added sugar. I think that makes one wonderful morning’s breakfast. Or two or three mornings if you quadruple the recipe like I did and saved some for the coming days 🙂
Did I mention these are naturally high in protein as well? Without any protein powder? 26 grams of healthy, natural protein (+ 6g fiber!) in just about 200 calories.. Does life get any better?
Oh yes, top with my Healthy Homemade Powdered Sugar and add even more protein to this breakfast!

Don’t want to use peanut flour and want the real stuff? Check out the 2nd recipe below!
- 1/3 cup mashed Banana (about 1 small banana)
- 2/3 cup Peanut Flour
- 1/3 cup + 1 tablespoon Egg Whites
- 1 teaspoon Baking Powder+dash of Sea Salt
- Optional: vanilla extract, cinnamon, any other additions you’d like!

- Combine all ingredients in blender and blend until smooth
- Heat pan on stove to medium heat and spray with coconut oil or oil of choice
- Pour pancake batter into round pancake shapes, fitting as many as your pan will fit with leaving space between.
- Flip when browned on bottom.
- Serve warm alone, or drizzled with honey/peanut butter/yogurt.
- 2 Eggs
- 2 Really Ripe Bananas, mashed
- 1/2 cup Peanut Butter (or Almond Butter)
- Optional but adds flavor: dash of vanilla extract, cinnamon, and sea salt
- Optional: any add-ins such as nuts, dried fruit, chocolate chips
- Whisk eggs in bowl
- Add in all ingredients and mix together
- Cook on stove top over medium high heat with a little olive or coconut oil.
- Flip when brown and cook until done.
- Top with honey or maple syrup
