You read that correctly, chocolate chip cookie dough butter is now a real thing.
Ahh, with my obsession with any nut butter, as you can tell from my other recipes already on my blog like this Pumpkin Peanut Butter and these two others, I knew I wanted to experiment with a new flavor.
And then Quest Nutrition sent me some of their free protein bars, one being chocolate chip cookie dough. As I took a bite into that delightful bar, I knew exactly what flavor nut butter I was going to make. Chocolate Chip Cookie Dough.
There are so many packaged nut butters out there in stores that are fun flavors, but most of them contain artificial sweeteners or lots of unhealthy oils. But this recipe contains only heart healthy fats 🙂
The ways this can be used are limitless! Use as a spread on toast, a dip for apples or celery, a topping on yogurt or oatmeal, or if your bad like me sometimes, even just with a tiny spoon!
Of course, it still is a nut butter so it’s not something you should eat mass amounts of 🙂
I hope you try this one out! Next time you have those cookie dough cravings, you’ll have a great alternative on hand 🙂
- 2 cups Raw Almonds
- 2 packets Stevia (can use agave or honey but it will make it thick)
- 2 teaspoons Coconut Oil
- 1 teaspoon Pure Vanilla Extract
- 1/4 teaspoon Butter Extract
- 1/4 teaspoon Almond Extract
- 1/4 cup Mini Chocolate Chips
- 1/8 teaspoon Sea Salt
- Toast almonds on tray in either a toaster oven or real oven at about 350 degrees Fahrenheit for about 10 minutes, or until golden brown.
- Flip almonds every 3 minutes to prevent burning.
- Allow to cool for about 5 minutes.
- Place almonds into food processor and blend until a smooth butter has formed. This will take around 10 minutes of blending (be patient!).
- Once a smooth butter has formed, add in all other ingredients except chips, and blend until incorporated.
- Allow to cool to room temperature.
- Stir in mini chocolate chips (if you do this before cooling, they will melt).
- Store in jar. Does not need to be refrigerated unless lasting longer than a few weeks.
