When I saw this month’s Recipe Redux theme, I knew I wanted to make something original. Something unique. Something that may get a “what?!” response when first seeing the ingredients..
Well, did I achieve that? What did you think when you saw cookie, pancake, and spaghetti squash…all in one recipe title?!

You know, I love havign to make recipes based on a theme. It is just so fun for me to sit there in class and think of what concoctions I can think up..that just MAY turn out good.
In this case, it did. Reallll good.
Oh and healthy. Pancakes that are low carb, high in protein..and in cookie flavor. You know, basically any fit person’s dream?
I guess I have to explain how this pertains to the theme though..
See, I have a recipe waaay back of how to bake spaghetti squash and eat is as spaghetti.
BUT. If you just happen to have leftover spaghetti squash. Well..THERE’S BREAKFAST.
yum. Cookies for breakfast. Okay not really cookies..but it sure tastes just as yummy. And who doesn’t like pancakes?
Top it with my newest recipe.. LOW CARB HIGH PROTEIN COOKIE BUTTER. Oh my. I think I just died inside.
Don’t hate the idea of spaghetti squash in a cookie flavored pancake form until trying it!

- 1/2 cup PACKED Spaghetti Squash, cooked according to [url href=”https://freshfitnhealthy.com/2013/06/spaghetti-squash/” title=”How to: Cook a Spaghetti Squash”]this recipe of mine[/url]
- 2 tablespoons Vanilla Whey Protein
- 1.5 tablespoons Coconut Flour (or about 3 tablespoons Oat Flour)
- 1 Egg + 1 extra Egg White (1/4 cup egg whites)
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Powder
- 1/2 teaspoon Butter Extract (so needed for the “cookie” flavor)
- Dash of Sea Salt
- Stevia to taste (I used 1 packet stevia)
- Optional (but SO recommended): Chocolate Chips to taste
- Cook Spaghetti Squash if not using leftover
- Combine eggs and all other liquids in one bowl.
- Combine dry ingredients in other, and add squash.
- Combine both bowls and mix until well incorporated.
- Pouring batter onto hot skillet and cook as normal pancakes.
