What are we celebrating for Day 5?!
Yep, St. Patty’s Day it is!
When thinking about what I wanted to make, at first I was going to do just some kind of recipe that was mint flavored or green. But then I was thinking, what is something I’ve never tried attempting before, and would be fun to experiment with? And then I saw a photo for Irish Soda Bread!
I have only had Irish Soda Bread once, at a friend’s house one time..but I thought, yes, that is what I’m going to try to create..a healthy, gluten free Irish Soda Bread recipe!
Making recipes gluten free can be tough, because breads become dry, dense, tasteless, and don’t rise at all. But no worries, this bread is nothing like that! It has a great flavor and the texture of real bread. And how fun do the raisins make it look?
How did I make it high in protein and healthy? Using unflavored pea protein powder, and substituting things like buttermilk, white sugar, white flour, and some of the butter. But keeping the flavor.
About 7 grams of protein in just 1 serving of this bread!

- 1 cup Brown Rice Flour
- 1/2 cup Oat Flour
- 3/4 cup Tapioca Starch
- 3/4 cup Pea Protein
- 1 1/4 cup Unsweetened Almond Milk +1 tablespoon Apple Cider Vinegar (or can just use buttermilk)
- 1 Egg
- 3 tablespoons Xylitol
- 2 tablespoons Ground Psyllium Husk
- 1 tablespoon Baking Powder
- 1/2 teaspoon Sea Salt
- 1/2 cup Raisins + 1 cup Water, boiling
- 2 tablespoons melted Butter + optional 1 tablespoon for topping
- Preheat oven to 400 degrees Fahrenheit.
- Bring water to a boil (2 minutes in microwave) in bowl, and add raisins to bowl. Set aside.
- In a small bowl, combine almond milk and vinegar, and allow to sit for 5 minutes (this is a buttermilk substitute). Add melted butter and egg into almond milk and whisk until all combined.
- In a big bowl, combine all dry ingredients.
- Add milk mixture to dry ingredients and stir together until you can form a ball with the dough.
- Drain raisins and add raisins to dough, mixing until all are evenly distributed.
- Place a piece of parchment paper on a cookie tray, and spray with nonstick spray.
- Place ball of dough onto tray, and score an “X” on the top.
- Bake in oven for 55 minute to one hour; bread should be browned on top and done throughout entire loaf.
