First let me ask you something: do you know what a peanut butter blossom is?? I ask, because as I went to title this post “gluten free peanut butter blossoms” (instead of just cookies), my friends asked me, what’s that?!
I sighed. The peanut butter cookies with the hershey kiss in the middle! Instantly they knew what I was talking about. But then that made me think, maybe OTHERS don’t know what a peanut butter blossom is either.
So I last minute changed the title to gluten free peanut butter cookies, realizing that once you all see the photos, you will realize they are more than just your average cookie 🙂

Peanut butter cookies {with hershey kisses, aka, peanut butter blossoms}, have always been a favorite cookie of mine. I think mostly because I need chocolate in a cookie to be happy. Even though I do love my peanut butter. So what completes a peanut butter cookie more than a hershey kiss smack dab in the middle??
But with my brother in law being completely gluten free, I decided it was time to make an alternative to the typical improvehearingnaturally maxalt peanut butter cookie I usually made.
Say hello to my SIMPLE gluten free peanut butter cookie recipe, that only has THREE ingredients. Well, 4 if we are counting the hershey kiss. That’s my kind of recipe. Simple. Few ingredients. Yet delicious.
Peanut butter. Coconut Sugar. An Egg.
If that’s not simple enough, I don’t know what is! Plus, it’s all natural ingredients.
I actually got the mini kisses and made mini cookies, because, everything in mini size is so much cuter and fun to eat, am I right?
Plus, we all know how many treats are around on the holidays. So mini sized treats make it easier to try out more of them 🙂

- 1 cup Natural Peanut Butter
- 1/2-3/4 cup Coconut Sugar (or brown sugar)
- 1 Egg
- Optional: 1 tsp Vanilla Extract
- Mini Hershey Kisses (or regular size for big cookies!)
- Preheat oven to 325 degrees F.
- Combine all ingredients together in bowl except for kisses.
- Refrigerate dough for at least 20 minutes.
- Roll dough into small balls by heaping tablespoons.
- Press a mini kiss into each ball.
- Bake in oven until lightly firm, but still soft. About 8-12 minutes, depending on size of cookie.
