Who doesn’t love a good s’more?! Especially if its on HOMEMADE GRAHAM CRACKERS.
I’ve seen a couple of people making their own recipe, so I thought, I’m up for the challenge! With finally having a week that is a little bit stressful school-wise, I knew it was time to buy the ingredients and try to come up with a recipe of my own (say hello to more than just 2 hours of sleep a night like I suffered last week!).
Not only did these taste good, but they made the entire house smell absolutely wonderful. My roommates loved me for it. A true Fall feeling kind of day.
Did I mention that by using Monk Fruit in the Raw as some of the sweetening agent, I was able to cut some calories as well? Monk Fruit in the Raw is an all natural sweetener derived from Monk Fruit, and is zero calories just like Stevia. A great choice in any baking you are doing during this holiday season. So you can place all of this in your mouth, and feel a whole lot less guilty 🙂
These are delicious. Eat plain. Eat as a s’more. Eat dipped into my ! These graham crackers are so versatile, they can be enjoyed with anything:)
How perfect are these for the holiday season?
- 1.5 cups GF Oat Flour or Almond Meal (or whole wheat flour if not caring about being GF)
- 2 tablespoons Coconut Oil, melted ( I used BetterBody Foods brand)
- 4 tablespoons Monk Fruit in the Raw
- 1.5 tablespoons Raw Honey ( I use Kevala’s brand)
- 1 tablespoons Molasses (can sub in more honey if you don’t like molasses)
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1/4 teaspoon Sea Salt
- 2 tablespoons Water (only if needed, add at the end as needed)
- Optional: Cinnamon and Sugar to sprinkle on top or honey to drizzle
- Preheat oven to 350 degrees F
- Combine all ingredients except for water.
- If needed, add water (looking for a sticky dough).
- Dough should be sticky and be able to be rolled. Once achieving the right consistency, place on wax paper and roll as thin as you can get it.
- Transfer to baking sheet sprayed with nonstick spray.
- Using a pizza cutter, slice into squares and poke holes in each square using a fork.
- Bake in oven for about 7 minutes. Remove tray, flip crackers, and bake for another 7 minutes. Check for crispness.
- Remove from oven if done and allow crackers to cool on tray.
