Who doesn’t like frosting?!
Well, actually, I personally hate store bought frosting. But I mean the real stuff 🙂
Unfortunately, frosting can be a pretty costly thing, and filled with tons of fat and calories. Not too mention a very processed food if buying pre-made with many additives.
With Valentines Day coming in just a month, I knew I would be needing frosting for my many dessert creations! And that is when I made this 100% Paleo, Healthy Frosting.
Ingredients? Just one! And then it is the fun time to spice it up how you would like 🙂
I made three varieties this first time just to show you how versatile it really can be.
Typical Vanilla, but oh this frosting is so much more than typical.
Such a light, fluffy texture, yet healthy! A combination of the lightness of whipped cream, and the richness of dense frosting. Perfect in my opinon!
Also I made a Pumpkin variety (obviously with my love for pumpkin)
And Chocolate! How could I not make a chocolate version?
Yes, yes I ate some of all three just straight with a spoon! Mmmm.
I had to hold myself back.
Good thing this is healthy enough to do just that…eat with a spoon 🙂

- 1 full fat canned Coconut Milk (cannot use “lite”)
- 1 teaspoon BetterBodyFood’s [url:2]Vanilla Extract
- [/url]Optional: Any flavor additions or mix ins! (cocoa, Kevala’s [url href=”http://astore.amazon.com/frefitnhea-20?node=1&page=3″]raw honey[/url], stevia, coconut, pumpkin, instant coffee…)
- Refrigerate one can of full fat coconut milk overnight
- Open can the next day, there should be a thick layer of hard “cream” on top. Scoop out the hard portion of the canned coconut milk, and leave behind the watery liquid.
- In a high speed blender, electric beaters, or food process, whip cream until fluffy.
- Add in any other ingredients you may want.
- Serve as a frosting on a cake or dessert, use as topping on ice cream or even breakfast dishes since it is so healthy! Just try not to eat too much just out of the bowl like me 😉
