Here in the Meckelberg home, we believe that ALL foods can fit. We also love three things: our ice cream, our DIY pizza nights, and our GATORS! #gogators. In case you haven’t been following on IG, I’ve recently converted my midwestern born and raised hubby to be a full time gator. See we live in enemy territory (tallahassee), so he began rooting for them since that’s all he knew. But don’t worry friends, I set him straight ;). But here’s the thing, yes pizza and ALL foods truly can fit into our #freshfitnhealthy lifestyles!
See, as a dietitian I see so many people thinking they can’t eat anything but chicken broccoli and brown rice in order to “be healthy”. My mission is to help more people see the truth that you CAN still live a healthy yet fun (& tasty) life. Insert my healthy pizza recipe that adds some extra nutrition through a protein source and part-skim cheese.
I’m super excited to share with you all this SIMPLE, and favorite tailgating recipe for your next gameday inspired by Johnsonville’s recipe contest they have going on (see below for deets!). Let me introduce my healthy pizza with all the #freshfitnFIVE ingredients on it to help you both enjoy your favorites AND stay energized and satisfied. And the best part is, you can totally customize it to meet your flavor preferences.
Plus, it’s just a fun way to spend time with your other half, whether it’s prepping for gameday, or just a date night in! I know at least with my husband, there’s always laughter when he’s trying to cook (a rarity)
The sausages were just too good to wait for…
Here’s how I created a #freshfitnFIVE pizza for the Johnsonville Recipe Contest:
- Protein: Johnsonville Chicken Sausages (which have become a new favorite in our house with the hubby them) They also have turkey sausages and regular sausages, of all flavors!
- Carbohydrate: Pizza Crust (you can use ANY you desire — from my healthiest cauliflower pizza crust to a gluten free flatbread to something like this giant 1-slice pizza crust I found and thought was so fun!)
- Healthy Fat: Part Skim Mozzarella
- Fiber: this pizza crust also was a good source of fiber, look for one that is whole wheat, made of veggies, or has some flaxseed in it to up the fiber! You can also add veggies to increase fiber, I just personally didn’t want to cover up the big F 😉 I always serve my pizza with a big salad or lots of side veggies as well for more nutrition!
- Boosts: Low Sugar Pizza Sauce, Dried Herbs, Sea Salt
The exact recipe will be below, but first I want to share more information on this COOL contest that Johnsonville is putting on for all of us SEC fans!

First of all, if you love CONTESTS like me (hello being a past college athlete and being competitive 🙂 ), then you’ll be super excited about THIS opportunity before I get into the recipe. Okay so Johnsonville just announced their Tailgate Throwdown contest, so where is all my other football fanatics out there?! Whether you’re a gator fan like me and are going to make a recipe that screams #GOGATORS, or will be making an Alabama-inspired Smoked Sausage & Grits, or maybe even a Hot ‘N Spicy Sausage Jambalaya for Louisiana fans (I won’t hold our past game against each other against ya), Johnsonville is asking all us SEC fans to share our original and favorite sausage tailgate recipe for a chance to win championship game tickets! Entries will be accepted now through November 5 and the contest will culminate with a Tailgate Throwdown before the SEC Championship Game in Atlanta, GA on Dec. 7, 2019, where a winning recipe will be crowned.
The contest logistics:
- SEC fans can enter their original tailgating recipe for a chance to win by visiting www.TailgateThrowdownContest.com now through Nov. 5, 2019 at 11:59 p.m. ET. Individuals will be asked to share the name of their recipe and its ingredients, cooking instructions and a photo of the finished dish.
- There will be two groups of winners: one (1) Ultimate Fan Favorite and two (2) Finalists. The Ultimate Fan Favorite recipe entry will be determined by a public vote, conducted on www.TailgateThrowdownContest.com between the dates of Nov. 6-15. For captivating fans with their tasty recipe, the Ultimate Fan Favorite will be awarded Johnsonville Sausage for one year (via 12 coupons) and a Sizzling Sausage Grill.
- A panel of Johnsonville members (employees) will review contest entries and help choose the two Finalists based on quality, originality, adherence to tailgating theme and visual representation. Johnsonville will notify the two Finalists the week of Nov. 18, in time for them to prepare a trip to the SEC Championship weekend in Atlanta
- The Finalists will receive the glory of showing off their tailgating mastery at a live Throwdown event with the Johnsonville Big Taste Grill the morning of the 2019 SEC Championship Game, in addition to: two tickets to the 2019 SEC Championship Game, a two-night double occupancy hotel room in market, and a $1,000 gift card for travel, expenses onsite and potential taxes associated with the prize

The Healthy Pizza with Chicken Sausage Recipe
- 1 Pizza Crust* [we used a fun 1 big slice option, but see notes below for alternatives]
- 1/2-1 cup Low Sugar Pizza Sauce
- 1 cup Part Skim Mozzarella Cheese
- 2 Johnsonville Apple Chicken Sausages, sliced
- Optional Additions: Sauteed veggies – peppers, onions, mushrooms
- Boost the Flavor: Sea Salt, Dried Herbs
- Preheat oven to 400 degrees
- If using pizza dough or making your own, make the crust and bake until firm. If using a premade, store-bought crust that is frozen, bake according to instructions. If using a flatbread or shelf-stable crust, proceed to next step.
- Add low sugar pizza sauce on top of crust
- Sprinkle cheese on top of sauce
- Add Johnsonville chicken sausages along with any other additions you’d like (sauteed onions, mushrooms and bell peppers are YUMMY]
- Bake until cheese is melted and crust is crispy, around 10-15 minutes.
