Because..when is starting your day with peanut butter NOT a good idea?!
Ever since I was a kid, I have loved french toast
I don’t know. There is just something SO comforting and delicious in it. Am I right?!
But with a typical piece of french toast being heavy on the carbohydrates and sugar, and low in the protein category..I usually never order it when I’m out (unless it’s a seasonal special and they have pumpkin. Then YES)
But that is the joy of being creative in my kitchen to me! {side note: creativity for this girl not only begins but STOPS in the kitchen. Don’t even try to give me a pencil or paintbrush}
ANYWAYS. Just like I love to make healthy, high protein alternatives to some of my other favorite foods like my Double Chocolate Ice Cream and my Peanut Butter Banana Biscottis..I love to make healthy french toast that’s high in protein too!
And the other day when I found some sample packets of Quest Nutrition’s Peanut Butter protein powder I got back at the Arnold Expo I worked with them in March..I knew how I was going to make my french toast healthy and packed with protein and peanut butter flavor!
I mean, can you EVER go wrong when you are making something peanut butter flavor?
Spoonful of peanut butter makes EVERYTHING right.
And no..this is not an extremely small plate {as us food photographers often use}, this bread is just EXTREMELY LARGE.
P28 bread is 140 calories per slice..but FOURTEEN grams of protein. Therefore one slice is more than enough and gives you extra protein! [but note: if using regular bread, I highly suggest using two slices]
Good thing this french toast is low in fat and high in protein..it’s becoming a staple.

- 1 slice of P28 Bread (if using other breads, I suggest 2 slices)**see note below
- 1/2 cup Almond Milk
- 1/2 cup Liquid Egg Whites
- 1/2 scoop Quest Peanut Butter Protein Powder
- Dash of Sea Salt and Vanilla Extract
- Optional: sweetener as needed (Quest’s protein powder is sweet enough so I didn’t need any!)
- Topping: Peanut Butter to drizzle
- Combine milk, eggwhites, protein powder, salt and vanilla extract in shallow bowl and mix.
- place slice (or slices) into bowl and allow to soak up all the mixture.
- Place in hot pan on stove, sprayed with nonstick spray.
- Cook and flip french toast until both sides are browned.
- Drizzle with peanut butter if desired.
