A healthier, gluten-free, homemade version of every child’s favorite cookie: an oreo!
Say what?!
We all know how much we loved dunking oreos in milk as a child. But with watching our health nowadays, sometimes foods like this go on our “do not eat list” (which just as a side note, I don’t believe in making such a list…moderation is key).
By posting this recipe I am entering a recipe contest sponsored by Cumberland Packing Corp. and am eligible to win prizes associated with the contest. I was not compensated for my time.
But whether you have deprived yourself or these or not, now you can enjoy a HEALTHY version!
And guess what? They are gluten free, dairy free, and could even be considered paleo friendly besides the sweeteners.
Which brings me to the highlight of this post.
I decided to use as part of the sweetener in this recipe. Why? Because it measures cup for cup like sugar, and cuts some of the calories out! It’s made from delicious vine-ripened monk fruit, also called luo han guo. Not to mention, it still gives the same wonderful taste, no weird after taste 🙂 Raw. Zero Calories. Baking-friendly. That is my kind of sweetener!
I also used which you can buy at www.Kevala.net. It was my first time trying out Coconut Butter, and it was so delicious! The perfect filling for these little babies.
Did I mention I made these for my oreo-loving boyfriend for our three year anniversary? Well I did!
He specially loves peppermint, so I decided to make half mint oreos, and half regular!
He doesn’t like recipes when they “taste healthy”. But he absolutely loved these! Oh and my mom loved them. How did she try them do you ask? Well, as I had a little extra dough I let her try it, and she was so obsessed, that she begged to have one when I made the extra oreo before packaging them up!
That’s when I knew it was a winner. And a recipe that was blog worthy 🙂
Enjoy your health and cookies too!
Especially during this holiday season as it seems like you can never get away onhealthy valium from the sweets. Literally, they are everywhere.
But you don’t have to feel guilty about these!
Hope that you enjoy these as much as my boyfriend and mom did 🙂
