PSA: this is not a sweet recipe. report, this is not a sweet recipe. (who am I? making meal recipe posts?! unheard of lately… #chocoholic)
But one thing I miss about being up in grad school and not at home: THE GRILL.
My mom and I used to grill chicken and salmon about 5 times a week. Every meal basically was on the grill! There is just something I love about the flavor that the grill adds. Anyone agree?
Usually we grill the chicken with just some olive oil and spices, or our salmon with just some coconut oil and herbs…and I try to get simple things like that out at restaurants too. But every once in awhile, I do love me some good peanut sauce. Which make me think: why not make a healthier version of that high fat delicious sauce??
Now many people use peanut flour as a peanut butter substitute when on a diet. And you can agree or disagree, but that stuff just doesn’t do justice for me when craving peanut butter. If I want peanut butter, I’m going to enjoy the REAL stuff in moderation instead of eating tbsp after tbsp of peanut flour reconstituted, in hopes it will satisfy.
BUT, I have found a wonderful use for the 2 lbs of peanut flour I bought. And that is in SAVORY sauces or sweet baked goods. As you can tell, this recipe here is in the savory category.
Making peanut marinades and dips is SO simple using this peanut flour, yet allows it to be so much LOWER in fat. Win win? I think so! And if you don’t like spicy, then no worries, just leave the sriracha out! 🙂

So before I go, tell me a few things:

- 6 Tbsp Peanut Flour
- 3 Tbsp Soy Sauce
- 2 Tbsp White Rice Vinegar
- 2 Tbsp Water
- 2 Tbsp Honey
- 1 tbsp Sriracha
- 1 teaspoon Sesame Oil
- 1/8 teaspoon Cayenne Pepper
- 2 lbs Chicken Tenderloins (or chicken breasts)
- Combine all ingredients in a bowl except for the chicken and stir together.
- Marinate chicken in mixture for at least 1 hour (but best overnight!)
- Heat grill on medium high heat, and grill chicken tenderloins, flipping once done and browned.
