If you couldn’t tell by my copious chia pudding recipes like this one, or this one, or this one, here is another to let you know just how much I like it. This time, it’s a chocolate chia pudding.
Something about chia pudding, especially chocolate chia pudding, that I just LOVE.
Why? Because it has the pudding texture yet it is healthy! Chia Seeds+ Almond Milk + desired add ins for flavor. Consuming a superfood that is packed with nutrients and health benefits for dessert? Yes please.
And it is versatile. I mean, it is so easy to change the flavor up! Typically I just add in what flavor I am looking for, whether pumpkin, or coffee, or peanut butter..but this time I decided to infuse the almond milk by using a tea bag for a delicious mint flavor!
Like last month had a theme of burgers, this month was TEA! I got creative as you can see. No tea drink here. Instead, a delicious dessert.
Summer time is coming, and chocolate chia pudding is a deLIGHTful, refreshing dessert. Or snack. Or breakfast. Hey why not have pudding for breakfast when it’s so healthy?
Mmm mmm mmm. Drizzle of healthy chocolate sauce anyone? You’ll soon love this chocolate chia pudding too!

- 1/4 cup Chia Seeds
- 1 cup Unsweetened Almond Milk (can use coconut milk for paleo diet)
- 1 Mint Tea Bag (can just add mint extract if desired or more fresh mint)
- 1 packet Stevia or 1 tablespoon Honey
- 1 tablespoon Fresh Mint Leaves, chopped
- 2 tablespoons Mini Chocolate Chips of choice (I use Enjoy Life brand)
- Optional {but highly recommended}: Homemade Chocolate Sauce: mix cocoa powder with enough milk for desired consistency, add sweetener to taste
- Place tea bag in a mug with milk and heat for one minute in microwave, discard tea bag after milk in infused with enough flavor, and allow milk to cool (can put in fridge to quicken this step)
- Blend mint leaves with cooled milk in blender
- Stir in all other ingredients and store in fridge for at least 2 hours, or until it has thickened to a pudding consistency
- Add healthy chocolate sauce or other topping of choice if desired.
