If you all follow me on snapchat or watch any of my youtube videos, you know that I’m OBSESSED with quest bars. I eat one a day. no joke.
Hey, a cooke dough or cookies and cream protein bar is a lot better than the typical dessert I would be eating, right??
Well when I got a box of their new flavor, I shared one with my mom (yes, she loves them so much I have to hide them when I come home or she steals them all 🙂 ), and she loveddd the mint chocolate flavor.
Bit of chocolate cookie and mint chocolate bits..mmm. Even a girl like me who isn’t the biggest mint chocolate chip fan, loves them.
ANYWAYS. If you follow me on instagram you already saw these, but for Mother’s Day I made THESE delicious balls for my momma.
Baked one of the new bars until it was crispy, and then ground it up.
Mixed in some of their low carb delicious chocolate milkshake protein powder..
Threw in some creamy, low fat Vanilla Bean @elliquark Quark..
And the rest was history.
These delicious, no bake cake balls were born.
Did I mention without the coating they only have about 50 calories, 1.8g fat, 3.8g carbs, and a whopping 6g protein and 3g fiber?! (add about 65 calories if coating them in the coconut butter)
Mmm mmm mmm.
What is YOUR favorite flavor of cake?!
- 1 Mint Chocolate Chip Quest Bar
- 1/3 cup Chocolate Milkshake Quest Protein Powder*
- 1/3 cup each: Rolled Oats and Raw Unprocessed Bran (adds fiber!)
- 2 tbsp Fat-Free or Low Fat Cream Cheese
- 2 tbsp Vanilla ElliQuark Quark (or greek yogurt)
- 1 tsp Coconut Oil, melted
- 1/2 tsp Vanilla Extract
- 2 packets Stevia (or other sugar to taste)
- For coating: 1/4 cup+2tbsp Coconut Butter, 1 tbsp Coconut Oil, 1/4 tsp Mint Extract, green food coloring, Honey/Liquid Stevia to taste
- Optional: mini chocolate chips to stir inside “cake” ball mixture and to melt for a drizzle when finished.
- Warm quest bar (unwrapped) in microwave for 5-10 seconds to soften.
- Roll out thin and bake in oven at 350 for about 5-10 minutes, or until crispy. Allow to cool.
- In high speed blender, add quest bar, oats, bran, and protein powder. Blend until all finely processed.
- Add in all other ingredients and blend until smooth.
- Roll into balls with hands (Mine made 8), and place on plate and in fridge for about 30 minutes.
- Can stop here, or coat in Mint Shell by melting coconut oil and coconut butter in microwave. Add mint extract, stevia to taste and green food coloring if desired.
- Drop balls into mint coating and fully cover.
- Refrigerate until hard/serving!
- (I also melted chocolate chips and added a little chocolate drizzle to mine)
