You know by now that I’m ALL ABOUT the no bake treats. Who’s got time for baking?? NOT this girl.
And what’s better than having a yummy snack or dessert, ready in 5 minutes?!
I was gone all weekend at a sports nutrition bootcamp led by some of the top sports registered dietitians from all around the nation in Knoxville this weekend (yep, that’s 16 hours of total car time for a 1 day bootcamp), but I still wanted to make a fun valentine’s day recipe for y’all when getting back!
I mean, I never go a Valentine’s Day without doing so, like these Paleo Cacao Banana Muffins, this Chocolate Covered Strawberry Shake, this Red Velvet Cake Dip, or of course everyone’s favorite…my Single Ladies Chocolate Cake.. hey just because I’m single, doesn’t mean I’m a full supporter of the good ole’ V-Day.
Chocolate and wine make life divine, even single…am I right or am I right??
But this recipe is QUICK to make, and SO YUMMY. Oh and did I mention high protein?? So it could be used as a super healthy dessert, or just a midday snack! Got a fitness lover you want to make a treat for this valentine’s day? This one is perfect!
The delicious flavors of a brownie, a cup of coffee (you can easily omit this if you don’t like coffee!), and peanut butter all in one. And can’t forget my favorite…M&Ms! - 1/4 cup Coconut Flour + teaspoons as needed***
- 1 scoop Whey Protein (28.4g)
- 1/4 cup Unsweetened Applesauce (can sub for vanilla greek yogurt too)
- 2 tbsp each: Cocoa Powder (I used dark cocoa for a rich taste), Honey, Peanut Butter
- 1 tbsp Instant Regular or Decaf Coffee (can easily omit if you don’t like a coffee flavor)
- 1 tsp Vanilla Extract
- Pinch of Sea Salt
- V-Day M&Ms or any chocolate chips/M&Ms
- Combine all dry ingredients in small bowl.
- Mix applesauce, liquid sweetener, peanut butter, and vanilla extract in separate bowl.
- Combine wet and dry ingredients.
- At this point, depending on whey protein used, you may need more coconut flour or more liquid. Add in coconut flour or applesauce by the teaspoon JUST until you have a dough that you can roll into balls.
- Roll into balls (I got 6).
- Press 1 M&M into each one, making it into a cookie like shape.
