Remember my Best Tasting Paleo Bread?! (if not see it here!)
well I had a ton of bananas that were about to go bad, and already had enough frozen, so, banana bread it was!

Now on to the good stuff..
But this time, I decided to create a challenge for myself of making it paleo. Many times when I’ve tried making paleo breads, they just don’t have the right consistency or don’t rise. But, after success with THIS BREAD, I knew I wanted to try a banana bread too!
Mm mm mmm. This bread was delicious. What banana bread isn’t?
And with that nutty hint of walnut bits. It just completes it.
For a breakfast treat with the family, a snack with a friend, or just because you have the munchies. This bread is it.

- 1/2 cup Coconut Flour
- 1 1/2 teaspoons Xanthan Gum/Guar Gum
- 1 teaspoon Cinnamon
- 1 teaspoon BetterBodyFoods Vanilla Extract
- ½ teaspoon Sea Salt
- 1 tablespoon Baking Powder
- ¼ teaspoon Baking Soda
- 2 large, very ripe Bananas, mashed (about ¾ cup mashed)
- 1/2 cup egg whites
- 2 Eggs
- ¾ cup canned Coconut Milk (or other nondairy milk if not paleo diet)
- 1 tablespoon Grassfed Butter or Coconut Oil, softened
- 2 tablespoons Raw Honey
- Optional: 1/4-1/2 cup chopped Walnuts
- Preheat oven to 350 degrees Fahrenheit
- Combine all dry ingredients in one bowl.
- In a separate bowl, whip egg whites with electric beater. Add in other wet ingredients.
- Gently stir dry ingredients into wet ingredients in parts.
- Pour into medium bread loaf pan and bake for 30 minutes or until done in the middle (this can vary with every oven).
