Paleo Gingerbread Cookies that are that same, delicious holiday taste for the season and packed with flavor, yet are healthier for you!
I have been loving the gingerbread flavor lately. I mean, don’t get me wrong pumpkin still takes first place in my heart (which is probably obvious with posts like this), but gingerbread is certainly growing on me! Which is why making these paleo gingerbread cookies was a must.
Molasses may be my new treat. And yes, I mean by the spoonfuls. Call me weird, but I just love the taste, and it has health benefits too!
But no one can ever go the holiday season without having or making gingerbread cookies! After scarfing down my favorite paleo cookies by PaleoBakeHouse, I knew I wanted to try to make something similar but in a gingerbread flavor.
Reasons to make these Paleo Gingerbread Cookies
- These paleo gingerbread cookies are so soft
- The cookies stay soft for days
- I created the exact texture and flavor I was looking for. Which is SO hard when using paleo ingredients only.
- They are the perfect holiday cookie (or anytime cookie)
- Oh, and these paleo gingerbread cookies are healthier than any you’d buy at the store!
Some of this batch I made went on the cookie trays that I gave out to the neighbors, and they were a hit. I say some, as many ended up in my belly before they made it to the plate. A girl has gotta eat her own cookies. You know, they say never trust a skinny cook; should I try to put a little fat on? 🙂
Anyways, I attempted one actual gingerbread man, but the rest I made into hearts as the man was hard to keep from breaking. Yikes. Arm by arm the little guy went into my mouth; right after these photos were taken. I have no  little self control.
This was a pretty small batch, but feel free to double or even triple this recipe. I wish I had after making them.
Great as a cookie to have on hand for your daily sweet tooth attack, or as a wonderful addition to the dessert table for your holiday party. Either way, these paleo gingerbread cookies won’t last long.

- 1 cup Almond Meal
- 1/4 cup Coconut Flour
- 1 egg (or 3 tablespoons egg whites)
- 2 tablespoons Applesauce
- 1 tablespoon each: Molasses, Raw Honey, Almond Butter
- 1 teaspoon each: Coconut Oil, Vanilla Extract
- 1/2 teaspoon Ground Ginger
- Dash of Sea Salt
- Preheat oven to 375 degrees F.
- Mix all dry ingredients in bowl
- Add wet ingredients and stir until dough-like texture forms
- Refrigerate dough for about 20 minutes
- Roll Dough into desired thickness, and cut using desired cookie cutter
- Bake in oven for about 5-8 minutes, depending on size of cookie
