Strawberry Shortcake + Doughnuts= Pure Bliss
It may be Fall, but I’m still loving my fresh berries!
Don’t you just love the fluffy, light texture of shortcake? These doughnuts are so light, just like angel food cake, yet filled with deliciously sweet strawberries in a doughnut form.
Free of gluten. Free of grains. Free of dairy. Free of nuts. Free of processed sugar. Free of wheat.
But definitely not free of flavor and absolute deliciousness!
I made them into mini doughnuts, and they were the perfect snack to pop in your mouth.
Compared to Dunk Donuts’ strawberry shortcake donut? Wait till you see down below!!
Ahh, let me just say, it was hard not to eat them all in one sitting.
But even if I had, it would have been guilt free!
You know that’s a winning recipe when you could eat doughnuts for breakfast and it be a healthy start to your day!
And top with my healthy paleo frosting? Yes please!

- 3 Egg Whites
- 2 tablespoons Coconut Flour
- 1 tablespoon Chia Seeds
- 1/2 cup Baking Stevia (use 1/4 cup Honey for paleo version)
- 1 teaspoon Vanilla
- 1 1/2 teaspoon Baking Powder
- 1/8 teaspoon Sea Salt
- 10 sliced and diced Strawberries
- Preheat oven to 350 degrees Fahrenheit
- Whip egg whites until peak begins to form, slowly add baking stevia 2 tablespoons at a time while whipping egg whites.
- Combine all dry ingredients in a small bowl, and slowly fold into whipped egg whites (very gently!).
- Fold in diced strawberries as well (again, very carefully not to ruin peaks)
- Spray mini doughnut molds (or regular sized ones), and spoon batter into molds.
- Bake in oven until done, about 10-15 minutes or until they slightly begin to brown on top.

I figured 3 of these mini doughnuts = 1 regular doughnut at the store (size wise), so that is what I compared between when sizing up my doughnuts to Dunkin Donuts’ Strawberry Shortcake Doughnut. So much lower in calories, carbs, sugar, sodium, and fat! And higher in protein and fiber. That’s a win!
