Remember that delicious Gingerbread Pumpkin Pudding I made that is vegan a few months back?
Well no matter the season, it was too good not to remake!
But then my mom decided to have some people over when I went home one weekend, and I was in charge of dessert. You can only guess what I made.
What better dessert for summer than a healthy, cool yet creamy dessert like pudding?
But of course, I couldn’t stop there. I had to make a good dessert presentation.
SO, I also remade my Paleo Gingerbread Cookies, and made a delicious yet healthy parfait! This is perfect for parties as you can have everything made in advance, and simply layer the parfait into glasses before desiring to serve!
Mm mm mmmm.

- 1 recipe of my Gingerbread Pumpkin Pudding
- 1 recipe of my Paleo Gingerbread Cookies
- Optional: my Paleo Whipped Topping , nuts, or any other desired topping
- Make pudding and cookies ahead of time. Set cookie aside to cool and place pudding in fridge covered.
- Before desiring to serve dessert, in mini dessert parfait glasses, layer pudding and broken up cookies. Top with any desired toppings.
