Pumpkin. Quest Bars. I’m not sure if there is a combination I could love more in this period of my life.
I don’t know why, but lately I have been LOVING quest bars, like probably too much. Yes, I eat one every day. #SorryI’mNotSorry
They are just such a delicious treat that satisfies my sweet cravings (that have been coming way too frequently lately)
And with all the pumpkin goodies that I got for my birthday (I guess every one else knows the key to my heart too), pumpkin foods and quest bars have both been a part of my DAILY diet.

This recipe right here is SO delicious though, and has such little ingredients that it is SUPER easy.
How could you not love a recipe that is yummy, simple, and minimal ingredients? Not to mention, YUMMY.
Oh and high in protein, low in fat, and HIGH in taste.
The cinnamon roll quest bar just completes the already wonderful flavor of pumpkin perfectly..trust me, you will not regret trying this one out!

- 1 Cinnamon Roll Quest Bar, broken into 8 pieces
- 1/4 cup Pumpkin Puree
- 1/4 cup Egg Whites
- 1 tablespoon Vanilla Whey Protein (I used About Time Protein)
- 1-2 packet Stevia (depending on desired sweetness)
- 1 teaspoon Vanilla Extract
- Dash of Sea Salt
- Dash of Cinnamon
- Optional: Whipped Topping for serving
- Preheat oven to 350 degrees F
- Break quest bar into 8 pieces (microwave for 10 seconds maximum to soften bar, but not actually “cook it”), and press each piece into the bottom of mini muffin hole after spraying tray with nonstick spray
- Combine all other ingredients except for optional whipped topping
- Scoop about 1 tablespoon mixture into each mini muffin cup on top of the piece of bar you already pressed to the bottom.
- Bake in oven at 350 degrees F for 5-7 minutes. Enjoy!
