Two St. Patty’s Day Healthy Recipes to keep you green, celebrating, yet thriving!
‘Tis the week of St. Patty’s Day, and I thought what better way to bring in the weekend then give you all some St. Patty’s Day Healthy Recipes that you can make for some green tasty fun!
Of course I had to recreate my morning #FreshFitnFive green smoothie in a SHAMROCK SHAKE kinda way. And then I also made my other favorite snack go-to that I always keep on hand in my freezer (well besides protein bites)… yogurt bark! Mint chocolate chip flavored. I used my new favorite addition to my wellness journey in both of these St. Patty’s Day Healthy Recipes.. an essential oil! You can totally just use regular mint extract, but if you want to learn more about essential oils and why I use them, just click right here!
- 1 Frozen Banana
- 1 cup Non-dairy Milk
- 1 Scoop Vanilla Protein Powder (I used NowFood’s Whey Protein)
- 1 Handful of Spinach
- 1 drop Peppermint Essential Oil**
- 1/2 tsp Vanilla Extract
- Sweetener as needed
- Ice as needed for thicker consistency
- Optional: Almond Milk Whipped Cream and Sweetened Cacao Nibs
- Blend all together except cacao nibs and whipped topping.
- Add those two ingredients if desired
- 1.5 cups Vanilla/Plain Greek Yogurt (higher fat yogurt will yield less icy end product)
- 1 scoop Greens Powder (or just green food coloring)
- 1 drop Peppermint Essential Oils
- Dash of Non-dairy Milk
- Sweetener as desired (I used Liquid Betterstevia)
- Cacao Nibs as desired
- Mix all ingredients together except for cacao nibs.
- Spray plate with coconut oil, and pour yogurt mixture onto it.
- Spread yogurt into thin layer with back of spoon.
- Add cacao nibs on top and slightly press into yogurt.
- Freeze for 1-2 hours+
- Break apart into pieces.
- Place in container/baggy and keep in freezer.
