A delicious, full of flavor, Thanksgiving Turkey Sandwich that is packed with nutrition and is a great recipe for those soon to come holiday leftovers!
FALL is finally upon us! Anyone else as excited as I am?! Something about Fall flavors and scents, makes me so happy. It just puts me in a good mood. Definitely my comfort foods and scents. You know what else puts me in a good mood? Making healthy taste delicious, like I did with this Thanksgiving Turkey Sandwich!
Well in thinking ahead, I know I’m about to have a TON of leftovers with the holidays coming up quickly. Lots of turkey leftovers.
Thankfully, if you , you know I make WHOLE turkeys all year round. Not just for Thanksgiving. And yes, for just myself. And only myself. #mealprep to it’s fullest.
So even though this recipe may look like I’m planning ahead, it’s a recipe I love to make YEAR ROUND. Delicious flavors of hand carved turkey, melted cheese, apples, caramelized onions…Who wouldn’t want something like that year ’round??
Not to mention, if you’re a grilled cheese fan…this is a grilled cheese x 10000 in flavor. Something about melted cheese and crispy, grilled bread. YUM.
See, like I said, I make turkeys monthly, as part of my food prep. It’s actually been a great conversation starter with new roommates each year. “How do YOU eat a WHOLE turkey?!” Hah! But when I make my whole turkeys, I’ll slice and vacuum seal half of it, and then use the other half for and salads for lunch, and by itself with sweet potatoes for dinner! I never get sick of it. And fresh, home cooked turkeys are always a healthier alternative than deli meat, that has a lot of preservatives and sodium.
But then sent me their new and improved hummus spreads in super awesome squeeze bottles, which are perfect for sandwiches. Using hummus for sandwiches is such a great alternative to most sandwich spreads and sauces, with it being packed full of healthy fats and fiber. When I saw their honey mustard flavored one, I knew it would be a GREAT addition to a thanksgiving turkey sandwich.
If fall flavors and foods make me happy, why wouldn’t I make a Thanksgiving Turkey Sandwich…in October?! You will NOT be disappointed if making whole turkeys like I do before Thanksgiving, just for this sandwich… Or you can go the {smart/lazy} way and buy the hand carved turkey from Trader Joes which I also love.

- 2 slices Ezekiel Bread (or other bread of choice)
- Hand Carved Turkey, shredded (as much as desired)
- 2 tbsp Sabra Honey Mustard Hummus Spread
- 1/2 Red Apple, sliced
- 1 slice Brie Cheese (I use a low fat variety)
- 1/2 tbsp Butter, softened for bread
- Optional: Homemade Cranberry Sauce (or a natural, store bought kind)
- Heat skillet on stove on medium heat.
- Spread bread slices with butter. (on sides that will be facing out )
- Assemble sandwich: Spread hummus on bottom slice of bread, then place others in this order on top of hummus – apple, turkey, brie cheese, and lastly, cranberry sauce on top if using (if not, add hummus to top slice of bread)
- Press sandwich together firmly, place in skillet, and grill on both sides, until lightly browned and cheese is melted.
- Enjoy!
