Are you excited for this week? I know I am!
First up..Halloween!
When thinking about Halloween, of course I was tempted to make something pumpkin, as that IS my favorite flavor..But then I was thinking of all the candy that Halloween usually consists of..and thought, I’m going to make a healthy remake of one!
I could have just been normal and made regular, healthier Reeses, you know, the ones you see all over the internet and food blogs..But normal just isn’t my thing.
SO, I decided to go TWO different ways. First, making them protein packed! And second, making them inside out! (Come on, we all love peanut butter way too much to just have one layer of it, right?)
The inspiration? I use to LOVE those uh-oh oreos, you know the “blonde” ones that had vanilla cookies and chocolate cream inside? Well..why not make something similar with Reeses?!
Halloween is always filled with tons of packaged candy like Reeses Cups, but now, you can make these and be enjoying a healthy YET STILL delicious treat.
Mmmm.

- Peanut Butter Layer:
- 1/2 cup Defatted Peanut Flour (could use PBFit by BetterBodyFoods)
- 3 tablespoons Coconut Oil, melted
- 2 packets Stevia
- 1 teaspoon Vanilla Extract
- Dash of Sea Salt (if using PBFit or PB2, it already has salt in it)

- Chocolate Layer:
- 1/4 cup AboutTime Chocolate Protein Powder
- 1 1/2 tablespoons Coconut Oil
- 1 tablespoon Unsweetened Cocoa
- 1 tablespoon Honey
- Note: Make Peanut Layer and Chocolate layer separately in different bowls
- In one bowl, slightly heat the 3 T coconut oil and then mix with all other peanut butter layer ingredients
- In another bowl, slightly heat 1.5T coconut oil and honey, and mix with all other chocolate layer ingredients
- In any silicon mold or mini muffin molds (spray with nonstick spray first), pour about 1 teaspoon of the peanut flour mixture in, then 1 teaspoon of the chocolate layer in, and then another 1 teaspoon of the peanut butter layer in. (if the mixtures are really thin, freeze in between adding each layer)
- Freeze for at least an hour or until set.
- Pop out of molds and store in sealed container in FREEZER, until desiring to eat.
- Before eating, take out of freezer and allow to sit between 1-3 minutes to slightly dethaw. Enjoy!
