You know people know you well when this is your 21st birthday cake.
Haha, yes, my momma and sista know me quite well, and this Fall when I turned 21, made me this to celebrate!
Now don’t get me wrong, I would be all over diving into a huge piece of decadent chocolate cake..
But after a huge family dinner, this hit the spot!
Along with pumpkin, watermelon is most certainly one of my favorite foods. Is it embarrassing to admit I’ve eaten a whole half in one day? Oops well I did. And I’m sure I could have finished it if my tummy didn’t bloat up from all that water! Practicing self control is very hard for this girl in the presence of pumpkin anything, chocolate, or watermelon..
But how perfect is this for any celebration or party? Even just for presentation sake it is a beautiful display!
Mmm, I can only imagine how lovely this would be for a picnic with friends or..4th of July!
Sweet, refreshing, hydrating, and delicious..this is surely a crowd pleaser. I can just see your friends/guests faces when you bring this to the party.
If you’re asking..yes, I did have “cake” for breakfast the next day after my birthday. And for lunch, and for snacks throughout the day. Hehe don’t think I’m losing out on nutrition with this one!

- 1 Large Watermelon, seedless
- Fresh Seasonal Fruit for topping

- Make my Paleo Frosting if desired ahead of time
- Remove the top and bottom from the watermelon and remove the rind from the middle section. You should be left with a cake-shaped piece of watermelon (photo below).
- Top with frosting or additional fruit as decoration, and display on any decorative plate/cake platter
