Sweet Potato Cake Balls

Ingredients

  • 1/2 cup Dates Soaked overnight in water in fridge. Keep the water from these! It will be a sweet syrup flavor that you can use instead of sweeteners for other things!
  • 1/4 cup Almonds soaked overnight in water in fridge.
  • 1/2 Raw Sweet Potato
  • 2 T Ground Flax-Seed
  • 1/4 cup unsweetened coconut
  • 1 tsp vanilla extract and cinnamon
  • 1/2 tsp pumpkin pie spice (or cloves, ginger, and nutmeg)

Instructions

  1. Remove dates and almonds from water after soaking. 

  2. Puree all ingredients in food processor until sticky enough to form into balls. If too wet, add more flax-seed or a little bit of coconut flour. If too dry, add some of the "syrup" from date-soaked water. 

  3. Form into balls. 

  4. Roll in extra coconut. 

  5. Enjoy!
