Ingredients

  • Spring Lettuce Mix
  • Arugula
  • 5 cherry tomatoes chopped
  • 1/4 red pepper, diced
  • 1 mini cucumber or about 1/4 cup chopped
  • 10 baby carrots chopped small
  • 1/2 avocado sliced
  • 2 T nutritional yeast
  • 1 T walnuts
  • 1 T chia seeds
  • 2 T walnuts
  • 2 T dried cherries or raisins
  • 2 T feta cheese
  • 2 T olive oil/coconut oil
  • 1 T balsamic vinegar
  • salt and peper to taste
  • grilled chicken, salmon, or steak to top salad optional

Instructions

  1. Cut up enough lettuce and arugula to fill plate. 

  2. Cut up all veggies and place on salad mix. 

  3. Sprinkle nutritional yeast, seeds, nuts, cheese, and dried fruit on top. 

  4. Drizzle oil and vinegar over all. 

  5. Top with protein if desired. 

  6. Enjoy!
