A healthy Tomato Basil Shrimp Zoodle recipe + tips for healthy eating with little time
Where are all my busy ladies at?! If you’re feeling frustrated because you genuinely WANT to live and eat healthy, yet you feel like you don’t have hours to dedicate to it.. You’re certainly not alone! When asking my community over on instagram, it was the most common “barrier” holding them back from the lifestyle they want to live.
And trust me, I’m right there with you! As a gal trying to balance healthy living, along with running a business, traveling a ton for business, planning a wedding, and being the best fiance (soon to be wife) I can be, I definitely don’t have hours to prep food or workout!
That’s why I find ways to “beat the system”, and live out a healthy lifestyle with little time. I shared my top 5 over on instagram today in depth, but here they are in case you missed them!
5 Tips for Healthy Eating with Little Free Time
1)Don’t skip breakfast, but make it simple.
I make my #freshfitnFIVE smoothie almost every day that takes about 2 min to have ready to go, and it fuels me with tons of good nutrients first thing!
2)Make healthy eating convenient
by prepping just a few snacks like protein bites and egg muffins and oatmeal squares on the weekend, to take on the go with you.
3)Keep frozen foods and meals around — so you can make things like this zoodle recipe!
that allow you to have meals ready to go in under 30 minutes. My most recent finds that I love are Love the Wild’s frozen seafood meals and their seafood kits that you can easily make into a full meal!
This is also how I made this DELICIOUS tomato basil recipe I’m sharing below in UNDER 30 minutes, helping me to get so much nutrients + the benefits of seafood in, without dedicating hours (or even 1!) to the meal. 4)Don’t eat and work.
I know this can be SO tempting when being such a busy bee! I got caught doing to waay too often when starting my business. But that will lead to a habit of mindlessness and of overeating. Try to make a lunch break, even if short!
5)Batch cook!
No need for hours of meal prepping, but if you’re going to make 2 chicken breasts for dinner, why not make 6 and have extras for the week? And if you’re baking a sweet potato, why not bake 4 more and have as easy ready-to-go sides??
The Zoodle Recipe
Now let’s talk a little more about this zoodle recipe and how I made such a delicious one in under 30 minutes.
I wrote this post here talking about the benefits of seafood and my new find that allows me to have it more often, LoveTheWild. Well, today’s recipe features their Cajun Shrimp seafood kit, which helps this busy gal add more seafood into her weekly diet WITHOUT the intimidation or hour of cooking. Best part? You can find these seafood kits in Whole Food Market stores nationwide!! So if you’re busy like me, or honestly just don’t even know how to prepare seafood at home and only tend to get it when eating out, now you’ve got your answer!
I simply made the shrimp seafood kit in my toaster oven as directed on back, which are these steps:
And then while it was cooking, quickly 1) made zoodles from zucchinis using my spiralizer and put in a pan on the stove (but y’all can buy them in noodle form as well to make it even easier!), 2) opened a can of roasted diced tomatoes, drained it a little, and threw those in with the zoodles on the stove, 3) chopped some fresh basil, 4) Added the cooked shrimp and fresh basil into pan when zoodles were soft (about 5-10min), and voila! Ready for a yummy meal in under 30!
- LoveTheWild Cajun Shrimp Seafood Kit
- Zoodles (or zucchinis and spiralize them into zoodles)
- 1 15oz can Diced Tomatoes
- 1 bunch Fresh Basil
- Seasonings or Cheese as Desired: I just added a little sea salt & pepper!
- Make the LoveTheWild shrimp seafood kit as directed on back
